HEALTHY PEANUT BUTTER & APPLE PARFAIT

You can’t always judge a recipe based on its title. Peanut Butter & Apple Parfait just doesn’t do this recipe justice. I threw around a few other names to call it, but thought Peanut Butter & Apple Salad just sounded weird. If you come up with a better name, please let me know!

Despite the name, I am so proud of this recipe, if you can even call it a recipe. It seriously is SO. STINKING. EASY.

In the midst of my health journey, this apple salad quickly became my go-to afternoon snack when I just needed something to tide me over until supper. 

As a texture person, I love the flavor combo of the peanut butter and apple with the crunch of the granola.

PICKING OUT THE BEST YOGURT

We always buy plain yogurt or plain Greek yogurt, which I’m not going to lie doesn’t taste great. It is by far the healthiest option though at the grocery store.

If you look at the ingredients on a typical yogurt at the store you’ll find a lot of extra ingredients in there. Many are filled with sugar, especially the fruit on the bottom and flavored ones. Snag my healthy grocery shopping list here to see what I keep stocked in my kitchen.

I am not a crazy person, I still like my yogurt sweetened.

My solution???

I add my own sweetener. Liquid sweeteners are my favorite, like honey, maple syrup, or agave nectar. These blend right in with the yogurt and won’t leave it grainy like straight sugar would.

It is so nice to be able to control what all food (and chemicals) go into our food.

Side note– I have even made homemade yogurt before, which is really cool! Unfortunately, I have not perfected it yet. If I do, I might just share it on here so you can make your own too!

MAKING THE PEANUT BUTTER & APPLE PARFAITS

The order is a little important in how you prepare these parfaits.

I like to dish up a serving of yogurt in a bowl.

Then, I put in the cocoa powder or PB2 powder. Don’t mix yet.

Drizzle with your liquid sweetener of choice.

Mix those all up with a spoon until the powder is dissolved.

Then I like to chop my apple up into small pieces. I definitely leave the skin on. It is easier, faster, and gives you extra fiber!

Top it either with granola or chocolate chips. You could also choose craisins, raisins, coconut, or nut butters. Really tons of choices!

Apple & Peanut Butter Yogurt Parfait

This yogurt parfait is the perfect, healthy afternoon snack. Packed with protein and fiber.
Prep Time 5 minutes
Total Time 5 minutes

Ingredients
  

  • 3/4 cup yogurt of choice- plain vanilla, Greek, etc.
  • 1 apple diced
  • PB2 powder
  • sweetener of choice- I like agave nectar or honey
  • optional ad ins- granola or chocolate chips

Instructions
 

  • Mix pb2 powder, yogurt, and sweetener in a small bowl. 
  • Dice one apple into small chunks and combine.
  • Top with granola or chocolate chips.
  • Enjoy!
