If you are trying to eat gluten-free, following an anti-inflammatory protocol, whole 30, keto or just plain healthy foods, it shouldn’t be a surprise that vegetables are a great option, no matter what diet you are following. 

Speaking from experience, a lot of people are not a fan of vegetables. We grew up eating carrots, broccoli, and peas, but probably didn’t eat too many others. With global trading and better transportation, the variety of fruits and vegetables we can buy at the store is outstanding. However, we probably don’t know HOW to make a lot of these vegetables.

The first time I had butternut squash was when I was in college and my room mate made dinner. Now, it is a regular staple around our house. Butternut squash is great side dish or topping on a salad, like Harvest Cobb Salad.  

Meal prep a batch of roasted butternut squash, throw into some glass containers and enjoy all week! It will save you tons of time and cleanup throughout the week.

ROASTED BUTTERNUT SQUASH INGREDIENTS

  • 1 butternut squash, diced
  • 2 Tbsp oil of choice
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder

OR drizzle with oil and sprinkle with use 1-2 tsp of homemade burger seasoning

MAKING THE ROASTED BUTTERNUT SQUASH

As you can see, there are a few steps, but with the right tools will help it go quickly! 

1. Peel butternut squash with a vegetable peeler. Cut in half and discard seeds and other insides. 

2. Slice into half inch chunks and then dice into small squares. The Vidalia Chop Wizard makes this job so much easier and faster! 

3. Spray or drizzle with olive oil, sprinkle with seasonings. Stir or give the pan a little shake to get the oil and seasonings mixed in.

4. Bake at 400 for roughly 30 minutes & enjoy!

Ingredients
  

  • 1 butternut squash peeled, scooped, and diced
  • 2 Tbsp. oil of choice
  • 1 tsp. salt
  • ½ tsp. pepper
  • ½ tsp. paprika
  • ½ tsp. garlic powder

Instructions
 

  • Preheat oven to 400 degrees.
  • Peel butternut squash and cut into desired size pieces. Place on a baking sheet covered in aluminum foil.
  • Drizzle with olive oil or oil of choice. Sprinkle seasonings over squash. Toss lightly.
  • Bake at 400 for 30-35 minutes.
