PEANUT BUTTER & JELLY NO BAKE ENERGY BALLS

THESE NO BAKE ENERGY BALLS ARE GLUTEN FREE , DAIRY FREE , REFINED SUGAR FREE AND AIP FRIENDLY.

I have been a long time fan of no bake energy balls for the last 10 years. They go by many other names, such as energy bites, oat balls, energy balls, protein balls, and the list goes on. The name really doesn’t matter, they are delicious.

They make a wonderful pre-workout snack, a quick and easy snack in the middle of the night for nursing mamas, or just a healthy treat to give your kids. 

My ultimate favorite energy bite is this peanut butter & chocolate chip one here. We ALWAYS have these in our freezer! If I were you, I would go check it out, like right now.

 

Recently I have started avoiding gluten, dairy, soy, caffeine, and refined sugar. 

As I’m still breastfeeding, I still get hungry at random times and just need a healthy and filling snack. 

I miss my normal energy bites but because they have chocolate chips in them, I can’t have them.

They make allergy free chocolate chips, but I’ve been trying to stay really close to foods that are grown or come straight from nature, like nuts, fruits, vegetables, and meat.

I was ecstatic when I found this recipe for peanut butter and jelly protein bites. Because I am trying to go as natural as possible, I omitted the protein powder, but you easily can put protein powder in these!

They seriously taste like a peanut butter and jelly sandwich, it’s UNBELIEVABLE really.

 

INGREDIENTS IN PB & JELLY NO BAKE ENERGY BALLS

  • oat flour, or old fashioned oats blended
  • natural peanut butter
  • sea salt
  • honey
  • coconut oil, melted
  • pure vanilla extract
  • freeze dried strawberries

STORING ENERGY BALLS

Store these no bake energy balls in the fridge for up to one week. BUT if you are anything like our family, they will be gone within two days. We might need to work on our self control.

You can also store them in the freezer for 2-3 months, but they seem to get a little dried out and crumbly.

PB & Jelly Protein Bites

These protein bites are absolutely amazing and make a wonderful treat if you are craving something sweet! They are gluten free, dairy free, and refined sugar free!
Prep Time 5 minutes
Total Time 5 minutes

Ingredients
  

  • 2.5 cups of old fashioned oats gluten free if needed or oat flour
  • 1/2 cup vanilla protein or more oat flour if you don’t have protein
  • 1/2 tsp sea salt
  • 1 cup smooth natural peanut butter
  • 2/3 cup honey
  • 2 TBSP melted coconut oil
  • 2 tsp vanilla extract
  • 1 cup freeze dried strawberries

Instructions
 

  • Blend oats to make oat flour.
  • Combine all ingredients into a small mixing bowl using a wooden or metal spoon.
  • Refrigerate for about 10 minutes.
  • Use your hands, spoon, or cookie dough scooper to make little balls.
  • Keep in the refrigerator for up to 1 week.
