My husband has made it for the past few years, and it is definitely one of our favorites. It is a great breakfast for the weekends without all of the extra fuss and mess. There are many variations for oven-baked pancakes, so your family will never get bored!

WHY I LOVE BLUEBERRY OVEN-BAKED PANCAKES

  • UNIQUE BREAKFAST. Sometimes I get tired of the same old breakfast options. Eggs, egg casserole, baked oatmeal, etc. That is why I instantly fell in love with this No-Flip Blueberry Pancake. 
  • SIMPLE. This recipe is not complicated, but it does require a little bit of work before sticking it in the oven.
  • IT IS BAKED. My kids are pretty good for about 15 minutes while I am in the kitchen, but start falling apart after that. I take 5 minutes to throw this together, stick in the oven and by the time I have the kids up and gathered to the table, it will be ready to eat!
  • INGREDIENTS YOU HAVE ON HAND. As long as you have a well stocked kitchen, you should have all of these ingredients in your fridge or freezer. Unless I am making something special, I don’t buy buttermilk, but just make my own. Before you freak out, you can too, it is just two ingredients, milk and lemon juice or white vinegar.

INGREDIENTS IN NO-FLIP BLUEBERRY PANCAKE

  • CORNMEAL: A great staple to keep in your pantry.
  • FLOUR: Use all purpose flour or your favorite gluten free flour mix.
  • EGGS
  • SUGAR
  • UNSALTED BUTTER
  • SALT
  • BAKING SODA
  • BAKING POWDER
  • VEGETABLE OIL 
  • BUTTERMILK (Or substitute 1 Tbsp white vinegar or lemon juice and 2/3 cup milk. Gently stir and let sit for 5 minutes. )
  • BLUEBERRIES– fresh or frozen 

HOW TO MAKE NO-FLIP PANCAKES? 

It is so simple to make this GIANT OVEN PANCAKE and your whole family is going to love it!

  1. Mix all dry ingredients together.
  2. Whisk wet ingredients and combine. 
  3. Fold in blueberries. 
  4. Pour batter in a hot, oven safe skillet, like a cast iron and cook for 5-6 minutes.
  5. Transfer the skillet to the oven to finish baking, around 10-12 minutes.
