15 MINUTE FLATBREAD PIZZA RECIPE

This flatbread pizza recipe is healthy, delicious, easy to make, and ready to eat in under 15 minutes!

I used to be a firm believer that lunch is meant for leftovers.

Technically, I still am.

What do you do though if there are no leftovers in the fridge? Dun-dun-dun…

Now that I am a stay at home mom, my husband comes home for lunch. Don’t get me wrong, I love the extra time with him, but that means another meal that I have to have food ready and on the table.

Momma doesn’t have time to make healthy and elaborate lunches.

Here at Living Practically, I am all about simplifying life by saving time and money. Some of our family favorite lunches are strombolis, quesadillas, salads and of course, this flatbread pizza.

Some of my favorite ingredients for flatbread pizzas.

INGREDIENTS FOR FLATBREAD PIZZA

CRUST– You are going to need some sort of crust, but get creative! We love to use a wrap, tortilla, or Naan if we have it.

SAUCE– Pesto, alfredo sauce, peanut butter, BBQ and meat sauce are our favorites.

TOPPINGS– You really can do whatever you want here. Spinach, banana peppers, sausage, basil, pepperoni, ham, pineapple, black olives, etc. The list can go on and on.

CHEESE– Mozzarella, cheddar, and parmesan cheese are typical pizza cheeses, but you can use whatever you have on hand.

WHY I LOVE FLATBREAD PIZZA

  • CHEAP. Each pizza is less than $2 to make, unless of course you put some expensive toppings on like shrimp or steak.
  • Personalize each pizza for each member of your family. Make gluten free, dairy free, low carb, sodium free, etc.
  • SIMPLE. These flatbread pizzas are so stinkin’ easy to make. Even your kids can do it!
  • Ingredients you already have on hand.
  • QUICK supper or lunch. Takes less than15 minutes.
  • HEALTHY. Add extra protein with protein wraps, meat, vegetables, etc.

STORING LEFTOVER FLATBREAD PIZZA

Like most foods, you need to keep leftover flatbread pizza in the refrigerator.

Unlike regular pizza though, I am not always a fan of leftover flatbread pizza. It really depends on your crust. If you use Naan, or a thinker crust, they should still taste pretty good the next day.

If you use a thin crust (like a wrap or tortilla), I have found that they don’t taste near as good as leftovers.

When I make them, I try not to have leftovers, so I plan on one pizza per person.

If we do have leftovers, I just feed them to our toddler the next couple of days. He isn’t picky, well at least most of the time.
