Low carb mashed potatoes are healthy. One bag is an extra four servings of vegetables for the day! Your kids will never know you are tricking them into eating more veggies 🙂
They are simple to throw together. I ALWAYS keep cauliflower and cauliflower rice in the freezer to throw into soups, smoothies, and of course potatoes.
INGREDIENTS IN MASHED POTATOES
- potatoes (1/2 potato per person)
- butter
- riced cauliflower
- milk
- garlic powder
- parsley
- salt
- pepper
- paprika

HOW TO MAKE LOW CARB MASHED POTATOES
1. Wash, peel and cut potatoes.
2. Boil in water for about 10 minutes.
3. Steam cauliflower rice in microwave.
4. Strain potatoes with a colander.
5. Add butter, milk, cauliflower, and all seasonings to the
potatoes and use a hand mixer to combine.
