HEALTHY ASIAN LETTUCE WRAPS- gluten free, dairy free, AIP

I ABSOLUTELY LOVE LETTUCE WRAPS. Have I said that already?

These Asian Lettuce Wraps remind me of the kind you get at a restaurant, but don’t leave you feeling bloated.

Healthy and DELICIOUS? Yes, yes they are.

Lettuce wraps are a great way to get in your vegetables, protein, and even some healthy carbs.

My whole family loves these lettuce wraps, even our toddler.

Even if your family is picky, you can change the recipe anyway that you and your family would like.

We make these Asian Lettuce Wraps at least once a month and just throw in whatever food we have on hand.

INGREDIENTS IN ASIAN LETTUCE WRAPS

MEAT– Ground beef or ground turkey, both are great options. You easily could double the recipe and do a mixture of both. The ground turkey is leaner, and therefore more healthy.

SOY SAUCE– You can easily substitute with a soy sauce alternative like coconut aminos.

SPICES– This recipe has paprika, salt, ginger, and garlic.

CARB OF CHOICE– Rice or quinoa are our favorites to add in, but can totally skip the carb if you want. Just make sure it is already cooked and add into the skillet when you add the soy sauce.

VEGGIES– Celery and carrots are the two vegetables in this recipe, but you could easily add onion, spinach, or kale.

HOW TO EAT ASIAN LETTUCE WRAPS

If you have good lettuce for wraps, like a Bibb lettuce leaf or romaine leaves, on hand, you can eat them as intended, like a lettuce wrap. 

Since I like to only go grocery shopping 1-2 times a month, I advocate for making do with what you have.

If you don’t have great lettuce on hand for lettuce wraps you can use any type of a lettuce and make it more of an Asian salad.

Looking to save time? These lettuce wraps make a wonderful meal for meal prepping!

Spice up the lettuce wraps with some chopped peanuts or cashews, shredded unsweetened coconut, and of course this homemade peanut sauce. This is such an easy lunch to take to work, and definitely a great meal prepping option.

Healthy Asian Lettuce Wraps

These healthy Asian lettuce wraps are out of this world! They are perfect for a quick and easy lunch or even a healthy supper. They are gluten free, dairy free, and AIP friendly!

Cook Time 10 minutes
Total Time 15 minutes

Ingredients
  

  • 1 lb. ground beef or ground turkey
  • 1 large carrot peeled, and chopped into small pieces
  • 1 small celery stalk cut into small pieces
  • 1/4 cup soy sauce or aminos
  • 1 Tbsp rice vinegar
  • 1 tsp garlic fresh, minced, or powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1 tsp ground ginger

Instructions
 

  • Brown ground beef or turkey in a large pan. Drain, but leave a little grease in pan.
  • In the same pan, saute celery for 2-3 minutes. Add in chopped carrot pieces and cook for about 2 minutes. 
  • If using minced garlic, add now and cook for one minute.
  • Add soy sauce, rice vinegar, paprika, salt, and ginger to pan. Simmer for about 5 minutes. 
  • Enjoy with a bed of lettuce or lettuce leaves.
