Between my husband and our kids, we eat a lot of pancakes in our house. These pancakes from scratch are our favorites so far!
We love to meal prep breakfasts to eliminate some of the early morning stress. Typically, we make extra pancakes and stick them in the fridge for the week or freezer for the next few weeks or months.
This homemade blueberry sauce is great on a lot of things, but pancakes is our favorite. It is so nice to have it in the fridge and ready for a quick breakfast.

WHY WE LOVE HOMEMADE BLUEBERRY SAUCE
USE IT SO MANY WAYS. This homemade blueberry sauce is obviously wonderful on pancakes and waffles, but is also delicious topped on ice cream, yogurt, oatmeal, and baked French toast casserole.
SIMPLE. It is so simple to make and takes less than 20 minutes. You really cannot beat that.
ONE DIRTY DISH. You only get one dish dirty when you make this blueberry sauce recipe. If you are anything like me, I HATE doing dishes. Every time I am in the kitchen, I try to minimize the amount of dishes I have to do.
INGREDIENTS IN BLUEBERRY SAUCE
SUGAR– If you are trying to be healthy, you could easily cut the sugar in half.
CORNSTARCH– This will help give it a nice thick texture.
WATER- This will activate the cornstarch and help get the right consistency.
LEMON JUICE– If you have fresh lemons on hand, use fresh lemon juice, but store boughten works too!
SALT- Just a pinch to bring out the flavor.
BLUEBERRIES– Fresh or frozen work fine. Since our family owns a blueberry farm, we always have TONS of blueberries in the freezer.
Blueberry Sauce for Pancakes
Ingredients
- ½ cup sugar
- 2 Tbsp cornstarch
- ¼ cup water
- 1 Tbsp lemon juice fresh is best
- 4 cups blueberries fresh or frozen
- pinch salt
Instructions
- Add all ingredients but blueberries to a saucepan and whisk. Cook over medium high heat until it is well mixed and starting to thicken. (about 2-3 minutes)
- Add in blueberries and stir well. Cook for about 10 minutes, or until desired consistency. Continue to stir occasionally.
- Serve warm and enjoy!
