Preheat oven to 350 and line 2 baking sheets with parchment paper. In a medium bowl, sift flour, baking soda, and salt together.
In a medium bowl, sift the flour, baking soda and salt together.
Using a mixer, beat the butter, sugar and brown sugar until smooth and mixed well together.
Add the egg and vanilla and mix on low speed.
Pour about half of the flour mixture in and stir with a wooden spoon. DO NOT OVER MIX.
Add the remaining flour AND chocolate chips and stir to combine. THIS HELPS TO NOT OVER MIX THE DOUGH.
Using a scoop, drop the dough onto the baking sheet.
Bake the cookies, 1 sheet at a time for 8-10 minutes.
Let cool for 5 minutes on the sheet before removing to a cooling rack.
