AMAZING HARVEST SALAD- gluten free

Does anything scream fall more than a delicious harvest Cobb salad? Well other than Pumpkin Spice Lattes and apple pie.


While doing this liver detox (cutting out gluten, soy, dairy, caffeine, and refined sugar) I really struggled to find recipes that I actually liked. Trust me, there were MANY flops.

When I came across this salad, my expectations were pretty low. I was SHOCKED at how delicious a healthy salad could be!

WHY I LOVE HARVEST SALAD

It is such a unique salad. I have had a lot of salads in my day, but not many like this. 

This harvest Cobb salad is healthy as it is packed with vegetables, fruit, healthy fats, and tons of fiber!

As with most salads, this one is customizable. You can add or remove the toppings based on what you and your family like!

This salad is packed with lean protein from the turkey bacon and hard boiled egg. You could always add deli ham if you want even more!

INGREDIENTS IN HARVEST COBB SALAD

Spinach or your favorite lettuce. All types could work from Spring Mixes to Romaine.

Roasted butternut squash is what really brings out the fall flavor.

Hard boiled egg. Meal prep these ahead of time so you have some in the fridge to grab quickly!

Turkey bacon. Again, have this already prepped, chopped and in the fridge to save time.

Apple. Really any type of apple would work here. No need to go and buy a special kind!

Roasted pumpkin seeds or pepitas. These are optional, but really add a delicious crunch and some nice texture to the salad.

This salad does not need cheese, but you could always add some if that is what floats your boat. Currently I am not eating dairy so I haven’t tried this salad with any cheese and I think it is pretty stinkin’ good without it.

The Maple Vinaigrette dressing ties in the sweet and savory combo of flavors. Just perfection!

Harvest Cobb Salad

If you are tired of the same old salads, you have to give this one a try! It is such a unique combo of fall flavors and so easy to meal prep! It is gluten free, dairy free, and refined sugar free.
Prep Time 30 minutes
Cook Time 10 minutes
Total Time 40 minutes

Ingredients
  

  • spinach or other lettuce
  • apple
  • hard boiled egg
  • roasted pumpkin seeds
  • butternut squash
  • bacon or turkey bacon
  • cheese omit if dairy free
  • 1/3 cup apple cider vinegar
  • 2 Tbsp pur maple syrup
  • 1 Tbsp Dijon mustard
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2/3 cup extra-virgin olive oil

Instructions
 

  • Hard boil eggs on stove, in oven, or instant pot.
  • Fry up bacon on the stove, in the instant pot, or in the oven.
  • Dice butternut squash into small chunks. (The smaller they are, the quicker they will cook through). 
  • Saute butternut squash in a skillet for about 10 minutes or bake in an oven for about 20 minutes until they are soft. 
  • Make salad dressing while waiting.
  • Dice apple into small pieces.
  • Assemble all items together & enjoy!
