I am not sure when the egg roll in a bowl became popular.
Making an educated guess, I would probably suspect the low carb diet made it famous.
I do not follow a low-carb diet, but I do try to minimize my carbs at supper, simply because my body doesn’t need much energy in the last couple of hours at night.
A few years ago I discovered a way to use up some cabbage that was about to go bad… the egg roll in a bowl. I had no idea it was a thing until months later.

Unlike the typical egg roll, the egg roll in a bowl is packed full of VEGETABLES! Carrots and cabbage are the main stars in the show, but you will also find onions and celery, although they are a little more discreet.
It is a 30 MINUTE MEAL. Seriously, who wants to spend extra time in the kitchen?
