Delicious Apple Pie Baked Oatmeal with Crumb Topping

All of us have had those crazy mornings where we run around like crazy in order to get out of the house on time. I have so many memories starting my work days stressed because I was running late. After realizing that there is a better way to run our mornings, I discovered the art of meal prepping breakfast foods.

Our family is a huge fan of baked oatmeal and it is a wonderful breakfast to meal prep once and enjoy all week. There is a huge variety of different types of baked oatmeals and they range in their level of healthy. Some are pretty healthy with no sugar or sweetener and some have a decent amount of sugar. A few of our favorites are carrot caked baked oatmeal, peanut butter apple baked oatmeal, and this apple baked oatmeal.

As I try to minimize refined sugar in my diet, I typically make healthy meals for my family because it is hard to say no when unhealthy options are around the house. My husband definitely has a sweet tooth though and I like to treat him occasionally with this phenomenal Apple baked oatmeal. I nickname it apple pie baked oatmeal because it’s definitely sweet, delicious, and definitely has some sugar.

Why we love Apple Pie Baked Oatmeal

CUSTOMIZABLE– Baked oatmeals are flexible and the recipes can be easily adjusted to fit your family’s preferences.

  • Like a little crunch? Sprinkle some pecans on top.
  • Need more texture? No problem, add a second apple.
  • Does somebody in your family eat dairy free? Use almond milk and skip the crumb topping.
  • Wanting to make it healthier? Omit the brown sugar.

CHEAP– All of the ingredients in apple baked oatmeal are pretty inexpensive, especially oats and eggs.

SIMPLE– This apple baked oatmeal is easy to make and should less than 10 minutes of prep time. Chopping up the apples is the most time consuming part, but leave the skin on for extra fiber and to make your life just a little bit simpler!

GREAT FOR MEAL PREP– Baked oatmeals are a wonderful idea to meal prep and store in the fridge for the week.

INGREDIENTS YOU HAVE ON HAND– As I try to always have a well stocked kitchen, this is a staple breakfast because we always have the ingredients. You do not need to buy anything special or make a trip to the grocery store to make this apple baked oatmeal

Ingredients in Apple Pie Baked Oatmeal

One of the things I simply love about this recipe is you probably have all of the ingredients in your kitchen already! As an advocate for grocery shopping twice a month and minimizing extra trips to the store, I love that I always have these items in my pantry. This saves me time and money and what who doesn’t want more time or money on her hands.

INGREDIENTS

  • old fashioned oats
  • baking powder
  • apple
  • salt
  • cinnamon
  • nutmeg
  • brown sugar
  • milk
  • eggs
  • vanilla
  • butter (crumb topping)
  • flour (crumb topping)

How to make Apple Baked Oatmeal

  1. Pre-heat oven to 350 degrees and grease a 9×9 square dish or oval baking ware with butter or coconut oil.
  2. Whisk together oats, baking powder, cinnamon, nutmeg and salt in a medium bowl.
  3. Dice apples. (Leaving the skins on adds fiber and makes your life easier, but you can peel if you wanna.)
  4. Combine milk, eggs, brown sugar and vanilla in a medium bowl. Whisk until sugar is dissolved.
  5. Pour dry ingredients into the milk mixture and stir until combined. Add diced apples. Pour into greased pan.
  6. Place topping ingredients in a small bowl and use a fork to combine. Sprinkle on top.
  7. Bake oatmeal for about 30 minutes until top turns golden brown.

TIP– Use a container with a lid so you can store leftovers without needing to wash another dish. I know you hate doing dishes momma. You can thank me later.

Can I make this recipe gluten free?

Absolutely! Even thought oats are originally gluten free, you can buy certified gluten free oats to ensure no contamination.

Skip the crumb topping or use your favorite gluten free all purpose flour.

Reheating baked oatmeal

Since we use this breakfast primarily for meal prep, reheating is part of the game.

SINGLE SERVING- Dish out your desired portion and stick in the microwave for about 1 minute. If you don’t have a microwave, you can put your plate (as long as it is oven safe) in the oven at 300 for about 10 minutes to reheat.

MULTIPLE SERVINGS- If you have a large family and want to reheat the pan, put in the oven at 300 for about 20-25 minutes.

If you need a little more sweetness, drizzle with maple syrup. Yum!

Ingredients
  

  • 2 cups old fashioned oats
  • 1 tsp baking powder
  • 2 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 tsp salt
  • 1 medium apple
  • 1 3/4 cups milk of choice
  • 3 eggs
  • 1/3 cup brown sugar
  • 1 tsp vanilla
  • 2 Tbsp brown sugar
  • 2 Tbsp flour
  • 2 Tbsp butter

Instructions
 

  • Pre-heat oven to 350 degrees and grease a 9x9 square dish with butter or coconut oil.
  • Whisk together oats, baking powder, cinnamon, nutmeg and salt in a medium bowl.
  • Dice apples. (Peeling is optional)
  • Combine milk, eggs, brown sugar and vanilla and whisk until sugar is dissolved.
  • Pour dry ingredients into the milk mixture and stir until combined. Add diced apples. Pour into greased pan.
  • Place topping ingredients in a small bowl and use a fork to combine. Sprinkle on top.
  • Bake oatmeal for about 30 minutes until top turns golden brown.
