Honey Oat Bread Recipe

This gluten free quick bread is simple to make and a household staple for our family. It pairs wonderfully with some homemade honey butter.

Ingredients
  

  • 3 cups oat flour
  • 1 cup milk of choice
  • ½ cup honey
  • 2 eggs
  • ½ tsp salt
  • 1 tsp baking soda
  • 1 tsp baking powder

Instructions
 

  • Preheat oven to 350℉ and prepare a loaf pan. Spray with nonstick spray and set aside.
  • Using a food processor or blender, grind a heaping 3 cups of old fashioned or quick oats to make your own oat flour. Grind for 1-2 minutes so that it is very fine.
  • In a large bowl, whisk together honey, eggs, milk, and salt.
  • Add oat flour, baking soda, and baking powder and mix well.
  • Let the batter set for 5 minutes.
  • Pour the batter (it will have thickened up some) into the prepared loaf pan. Bake for 30-40 minutes, until inserted toothpick comes out clean.
  • Let the bread cool for 10 minutes and then run knife around the edges and flip it out of the pan. Let cool completely and then enjoy!
  • Wrap loaf with seran wrap or a Ziploc bag and store loaf on the counter for a couple of days or the fridge for a week.
