Zuppa Toscana

Crockpot Zuppa Toscana is a quick meal to throw together into your slow cooker and enjoy hours later. Serve with a salad or bread for a complete meal.

Ingredients
  

  • 1 lb. ground sausage
  • 6 slices of bacon chopped into small pieces
  • 4 cups potatoes sweet, Idaho, or combo
  • 2-3 garlic cloves
  • 2 tsp. fennel seeds
  • 1 tsp. paprika
  • 1 tsp. salt
  • ½ tsp. black pepper
  • 1 tsp. red pepper flakes optional
  • 64 oz chicken broth
  • 1 cup heavy cream or half and half*

Instructions
 

  • Cook sausage in a large skillet or saute in Instant Pot. While meat is cooking, chop bacon and onions into small pieces. Remove sausage and drain grease.
  • Fry bacon and add onion into the same skillet to sauté for 4-5 minutes.
  • While they are cooking, chop potatoes, kale and garlic.
  • Add sausage, bacon, onions, potatoes, kale, seasonings, garlic, salt, and broth into a crockpot. Cook on low for 6-8 hours.
  • Sprinkle with shredded parmesan cheese and enjoy!

Notes

*Use can of coconut milk for a healthier option.
