APPLE & PEANUT BUTTER BAKED OATMEAL- gluten & dairy free

This apple and peanut butter baked oatmeal is such a great and easy way to start your busy morning!

Ever get tired of the same old breakfasts? Are you looking for a new breakfast that is delicious, easy, and healthy?

This baked oatmeal is packed with protein and is quick to make!

I think we all can agree, mornings are busy, especially if your kiddos are going to school. Having a good morning routine can be very helpful and help you keep your sanity momma!

It normally takes our family  20-30 minutes to make breakfast and do dishes before we head off to work. If we can eliminate two of those steps, it is a win-win!

We love to make something one morning (or evening) and eat the leftovers throughout the week. It is SUCH a great way to have healthy options available and will save TONS of time!

This protein packed breakfast is one of our favorites! If baked oatmeal is not one of your go-to breakfasts, you have to give them a try! 

WHY I LOVE PEANUT BUTTER BAKED OATMEAL

  • Delicious flavor! The combination of apple, peanut butter and cinnamon take this baked oatmeal to the next level.
  • Quick & easy to make. This recipe is easy to make and only takes about 10 minutes. All you do is combine all of the ingredients in a bowl and pour into your baking dish! Plus, it only makes a few dishes to wash afterwards.
  • Great for meal prep. Mornings seem to be busy for everybody. Why not make it easier by having breakfast already made? I normally make this oatmeal on a Sunday night and grab a few bites fresh out of the oven. We then let it cool and refrigerate it for quick breakfasts.  ​​
  • Kid-friendly. Our toddler loves baked oatmeal. It is such a quick and easy meal for him any time of day. He has no idea it is healthy!

IS THIS BAKED OATMEAL HEALTHY?

Yes. Baked oatmeal is a source of “good carbs” that give energy. This recipe is made with clean ingredients which in my opinion means healthy.

It is full of protein. The whey protein is an optional add-in for this breakfast. I am always looking for ways to get more protein in my diet, so I normally add it in.

This Apple & Peanut Butter Baked Oatmeal fills you up because of the fiber from the oats and the protein should keep you full for hours.

BEST WAY TO EAT PEANUT BUTTER BAKED OATMEAL

I normally make this baked oatmeal one evening while I am making supper and then stick it in the fridge. The next morning, I just put my serving on a plate and microwave for 1-2 minutes. 

It is delicious just the way that it is, but sometimes I put a little dollop of yogurt on top for some extra pizazz. 

My husband will put his in a bowl and drizzle with milk and have it more like a cereal. There are so many options, I would love to hear how your family eats baked oatmeal in the comments below!

MEAL PREP TIP Make your baked oatmeal in a container that has a lid so you can easily stack it in your refrigerator. This will help save space in your fridge & eliminate needing to transfer to another dish later.  

Apple & Peanut Butter Baked Oatmeal

This is a healthy and delicious breakfast packed with protein! You and your family are sure to love it!
Prep Time 5 minutes
Cook Time 35 minutes
Total Time 40 minutes

Ingredients
  

  • 2 cups old fashioned oats
  • 1 scoop protein powder optional
  • 1/2 teaspoon sea salt
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 3/4 cups almond milk or milk of your choice
  • 1 large egg
  • 3 tablespoons unsweetened applesauce
  • 2 tbsp honey
  • 1 teaspoon vanilla extract
  • 1/2 cup Homemade Peanut Butter or creamy natural peanut butter
  • 1 1/4 cups diced apples I leave the skin on

Instructions
 

  • Preheat the oven to 350 degrees F. Grease an 8 x 8 square baking dish and set aside.
  • In a large bowl, mix together the oats, protein powder, baking powder, salt, and cinnamon. Set aside. In another small bowl, whisk together the almond milk, egg, honey, applesauce, and vanilla extract.
  • Pour the liquid mixture over the oat mixture and stir to combine. Let it sit for 5 minutes. Stir in the peanut butter and mix until combined. Add the apples and stir again. Pour mixture into prepared pan. Top with sliced apples and cinnamon.
  • Bake for 35 minutes or until the top is golden and oatmeal is set. Let cool for 5 minutes and serve warm.
