Growing up, meatloaf was one of my favorite meals.
My mom had it in her monthly meal rotation as it was easy and her kids would eat it. That is what you call a WIN-WIN!
Normally, I serve my healthy meatloaf with low carb mashed potatoes and some sort of a vegetable, like a salad, peas, broccoli, or Brussel sprouts, just like my mom did. It just wouldn’t feel right eating meatloaf without mashed potatoes.
In skimming the world of Pinterest, most meatloaf recipes are pretty similar, with ground beef, a few seasonings, bread crumbs, and topped with a sweet brown sugar red sauce.
This recipe is comparable, but gluten free and sugar free.
WHY I LOVE THIS HEALTHY MEATLOAF RECIPE
This one is a pretty good go-to staple in our house.
EASY TO THROW TOGETHER. With just 5 minutes of prep time, meatloaf is so simple and quick to prepare.
INGREDIENTS YOU ALREADY HAVE ON HAND. As long as you keep some ground beef in the freezer, you should have all of these items in your kitchen. Checkout my healthy grocery list to see what I keep stocked.
NOSTALGIC. Meatloaf was a staple in my childhood home. Eating it brings back so many fond memories of my childhood. With just two small changes, this healthier meatloaf is now a staple in our home too.
GREAT FREEZER MEAL-Whenever I make it I like to double or triple the batch, and stick in the freezer. It makes for such a quick meal now and later!

INGREDIENTS IN MEATLOAF
- ground beef

egg

spices- paprika, garlic powder, salt, pepper, red pepper flakes, oregano)

Worcestershire sauce
- soy sauce
- ketchup
- honey (or brown sugar)
HOW TO MAKE HEALTHY MEATLOAF
Chop onions.
Add all ingredients to a big bowl.
Mix with your hands or a spoon. Dish into loaf or mini loaf pans.
Whisk together the red sauce and set aside.
Bake the meatloaf for about 30 minutes. Pour red sauce over the meatloaf. Bake for an additional 15 minutes.
CAN YOU FREEZE MEATLOAF?
Yes! Meatloaf is a GREAT freezer meal! Instead of doing a day of meal prep, I like to triple the batch so we eat one for supper, and have 2 more in the freezer.
Freeze meatloaf in a loaf or mini loaf pans without sauce. Wrap tightly with plastic wrap and foil.
When ready to bake, thaw frozen meatloaf pan for 6-8 hours. Follow baking instructions.
In case you are having one of those crazy days and don’t have time to thaw, you can still bake it frozen, just add an EXTRA 30-45 minutes to the cooking time. Make sure you get the internal temperature to 160 degrees.
