GOOEY PEANUT BUTTER BARS (Gluten free, refined sugar free, and dairy free)

These gooey peanut butter bars are healthy and sugar free, but you would never guess it! They are a simple and delicious dessert that is also kid friendly. It doesn’t get much better than that!

As I continue to eat healthy and minimize sugar, my taste buds have changed significantly! 

I have discovered some really fun healthy desserts like buckeye balls, buckeye bars, pb &j bites, peanut butter energy bites, homemade granola bars, and chocolate covered bananas.

If you are looking for a healthy dessert that isn’t going to leave you feeling like trash, these gooey peanut butter bars are it. 

They are refined sugar free, gluten free, and dairy free.

Remember, here at Living Practically, I like to do things simple. These peanut butter bars take less than 30 minutes to make and are guilt free!

WHY I LOVE GOOEY PEANUT BUTTER BARS

Every food blogger has to say their food is delicious, otherwise they would be out of a job. Finding HEALTHY + DELICIOUS foods is not easy, especially desserts.

This recipe nails it. Well, at least in my opinion.

DELICIOUS– Have you heard of the peanut butter and chocolate combo? Of course you have. It is very popular these days and absolutely perfect.

HEALTHY– Even though these bars are “healthy”, the peanut butter and chocolate combination is still AMAZING. No extra added sugar. Or gluten. Or dairy. Pretty clean ingredients if you ask me!

EASY– They are very simple to make, like throw everything in a bowl and mix. The actual work time is about 5 minutes and then just bake!

GOOEY PEANUT BUTTER BARS INGREDIENTS

  • BAKING SODA
  • HONEY
  • PEANUT BUTTER– If you want them to taste better, go with store bought creamy peanut butter but if you want them to be healthier, go with a natural peanut butter. 
  • EGGS
  • VANILLA EXTRACT
  • CHOCOLATE CHIPS OF CHOICE– Use dairy free chocolate chips if needed or just skip them all together. 

Amazing Gooey Peanut Butter Bars

You will NEVER guess these gooey peanut butter bars are healthy! They are gluten free, dairy free, and refined sugar free. Simple, delicious, and healthy dessert that you can throw together in under 30 minutes. It doesn't get much better than that!
Prep Time 5 minutes
Cook Time 20 minutes
Total Time 25 minutes
Servings 9 servings

Ingredients
  

  • 1 ½ cup peanut butter all natural is healthiest
  • ½ cup honey or maple syrup
  • 2 tsp pure vanilla extract not imitation
  • 2 eggs
  • ½ tsp baking soda
  • ½ cup chocolate chips

Instructions
 

  • Preheat oven to 350 degrees.
  • Grease an 8×8 baking dish with spray and set aside.
  • Combine all ingredients in a large bowl and mix well.
  • Spread batter into backing dish and smooth top with a spatula. Sprinkle with chocolate chips.
  • Bake for 20-22 minutes, or until desired gooeyness.
  • Cool and cut into squares.

CAN I FREEZE THESE BARS?

Gooey Peanut Butter bars freeze really well and will last in the freezer for months.

When ready to eat, let them sit at room temperature for about 5 minutes to soften up to pure perfection.

TIP: Store some in the freezer so you don’t eat the whole pan in one setting. Not like I am speaking from experience or anything.
