If you have ever been to Olive Garden, you know the famous Zuppa Toscana soup. It literally means Tuscan soup in Italian and I can testify that it is delicious.
In an attempt to make it a little healthier, and add a little more flavor, I like sweet potatoes instead of the typical white potatoes. You could always opt for a combo too, which is what I normally do.

INGREDIENTS IN ZUPPA TOSCANA RECIPE
GROUND SAUSAGE
BACON
POTATOES– sweet potatoes, Idaho, or a combination of both!
ONION
GARLIC
SPICES– fennel seeds, paprika, pepper, red pepper flakes
BROTH– chicken, beef, turkey, or vegetable work fine
KALE or SPINACH
CREAM– Heavy cream will give it the creamiest flavor, but you can use half and half or 1 can of coconut milk for your healthiest options.
Zuppa Toscana
Ingredients
- 1 lb. ground sausage
- 6 slices of bacon chopped into small pieces
- 4 cups potatoes sweet, Idaho, or combo
- 2-3 garlic cloves
- 2 tsp. fennel seeds
- 1 tsp. paprika
- 1 tsp. salt
- ½ tsp. black pepper
- 1 tsp. red pepper flakes optional
- 64 oz chicken broth
- 1 cup heavy cream or half and half*
Instructions
- Cook sausage in a large skillet or saute in Instant Pot. While meat is cooking, chop bacon and onions into small pieces. Remove sausage and drain grease.
- Fry bacon and add onion into the same skillet to sauté for 4-5 minutes.
- While they are cooking, chop potatoes, kale and garlic.
- Add sausage, bacon, onions, potatoes, kale, seasonings, garlic, salt, and broth into a crockpot. Cook on low for 6-8 hours.
- Sprinkle with shredded parmesan cheese and enjoy!
