I never would have tried making chicken curry if it was not for my husband.
Before getting married, my husband was a world traveler. He had spent multiple winters in Africa, and his flights gave him layovers in some random cities.
It can be a blessing and a curse, but he is quite good in the kitchen. A few years ago, he made chicken curry for me. I was a skeptic and thought I would hate it. I was shocked that I actually liked it.
If you are a little nervous to try eating curry or even making it, give it a shot. You won’t know until you try. A let me tell you that this recipe is easy, delicious, and healthy! Spice up your boring suppers with a little Indian twist.

WHY I LOVE CROCKPOT CHICKEN CURRY
UNIQUE. I never grew up eating curry, honestly my mom probably had never even heard of it. Thanks to Pinterest, we can serve so many unique meals and should NEVER get tired of the same old thing or getting in a rut.
CROCKPOT MEAL. If you are like me, I don’t always think to grab my crockpot. I love when a meal is specifically designed for the crockpot because it eliminates SO. MUCH. STRESS.
During nap time, I an toss all of these ingredients in the crockpot and go get other things done. Anything that helps the supper time rush is a WIN-WIN in my book!
SIMPLE. You can throw this meal into the crockpot in under 10 minutes. No need to sauté anything, just throw it all in and forget about it! Well don’t actually, because there is such a thing as over cooking in a crockpot…definitely speaking from experience.
INGREDIENTS IN CHICKEN CURRY
CHICKEN– Cut the chicken breasts into 1-inch cubes.
TOMATO PASTE & TOMATO SAUCE– You can’t have curry without the tomatoes!
UNSWEETENED COCONUT MILK- Always have a can on hand for making soups healthier!
ONION & PEAS– Feel free to skip the peas, add more, or add broccoli instead.
GARLIC CLOVES– Freshly minced garlic or from a jar will work fine.
HONEY– It brings a little bit of sweetness without refined sugar.
SPICES– Curry powder, salt, paprika, and red pepper flakes for some heat.
WHAT TO SERVE WITH CHICKEN CURRY?
RICE– Brown rice, white rice, and cauliflower rice are ALL great options! If you are wanting the one that tastes the best, go for white rice. Wanting to lower carbs? Cauliflower rice is your winner and is still pretty stinking good.
POTATOES– Baked potatoes or mashed potatoes are great to serve with curry also.
Crockpot Chicken Curry
Ingredients
- 2 lbs. chicken breast cut into 1 inch cubes
- 6 oz can tomato paste
- 13.5 oz can unsweetened coconut milk
- 1 onion chopped
- 2 large garlic cloves minced
- 3 Tbsp. honey
- 2 Tbsp. curry powder
- 1 tsp. salt
- 1 tsp. paprika
- 1 tsp. crushed red pepper flakes optional
- 2 cup frozen peas optional
Instructions
- Put all ingredients into crockpot. Cook on low for 6-7 hours.
- About an hour before serving, add vegetables of choice (peas or broccoli).
