CILANTRO LIME DRESSING RECIPE- gluten free, dairy free, AIP friendly
This cilantro lime dressing recipe is the perfect compliment for tacos, salads, burritos, or pretty much any Mexican dish.
I have heard other people talk about how sauces and dressings really take a dish to the next level.
Being practical, I never thought that it was worth it to take the time to make a lot of sauces and dressings.
Once I started looking at ingredient list at the grocery store, I saw how full salad dressings, sauces, and spices were full of sugar, salt, and tons of chemicals that I can’t even pronounce.
When doing a 6-week liver detox for health reasons, I cut out soy, gluten, caffeine, refined sugar, and dairy. I got really good at looking at ingredient lists.
I always assumed that salad and salad dressings were healthy. NOT TRUE. I realized that if I wanted to have a clean salad dressing that wasn’t expensive, I needed to make my own.
WHY THIS CILANTRO LIME DRESSING RECIPE?
Cilantro lime dressing is made with avocado, which is a great source of healthy fat.
Even though it contains avocado, the dressing will keep in the fridge for 4 to 5 days.
This cilantro lime dressing is packed full of flavor, and is better than anything that I have bought at the store.
Plus, I just recently learned that you can freeze avocados. If you’re anything like me, I feel like there’s only a few days where I have fresh avocados ready. Just plop them in the freezer, and grab one out when it’s time to make this dressing.
INGREDIENTS IN CILANTRO LIME DRESSING
FRESH CILANTRO– I love having cilantro in the fridge! Be sure to put it in a glass of water, cover with a ziplock baggie, and store in the fridge. It should last about one week.
LIME JUICE– fresh is best, but you can also use from concentrate.
AVOCADO– You can use a fresh avocado, or a frozen one for this recipe. I just recently used you can freeze ripe avocados, GAME CHANGER!
SPICES– Garlic powder, salt, pepper are what the recipe calls for, but you could change them up if you want!
WATER– Just a little water to make it a good consistency for drizzling.
HOW TO USE CILANTRO LIME DRESSING
Obviously it is great on any type of a salad, especially any type of Mexican or taco.
It is delicious drizzled on top burrito bowls, in burritos, and tacos. Make it when you meal prep and take your meal to the next level.
I actually just recently used it on fish tacos and really loved that!
Cilantro Lime Dressing
Ingredients
- 1/3 cup water
- 2 Tbsp. fresh cilantro
- 1 Lime juiced or 2 Tbsp lime juice
- 1 tsp. garlic powder
- 1 tsp. salt
- 1/2 tsp black pepper
- 1 medium avocado pitted
Instructions
- Blend everything in blender.
- Store in the fridge for up to one week.
