Eating healthy does not have to mean boring, bland, or disgusting.
This is something I’ve learned over the past year. Some of the best desserts I have made over the last year have been really tasty AND healthy. They have natural sugar, like honey or maple syrup, but not added or refined sugars.
They don’t leave you feeling sluggish, give you a sugar rush, or even a sugar headache. From energy bites, gooey peanut butter bars, pb& j bites, and buckeye bars, I’ve been very pleased with many of the different healthy desserts I have tried.
When you’re craving something sweet, these chocolate covered bananas are perfect. I like to throw in some peanut butter for wonderful alternative for Reese’s.
Remember, here at Living Practically, I like to do things simple and show you that eating healthy is VERY possible, even when busy.
WHY I LOVE CHOCOLATE COVERED BANANAS
Chocolate covered bananas are a great HEALTHY SNACK FOR KIDS. Set them out for a few minutes before you want to enjoy so they can thaw.
They are very SIMPLE, even though they take a little over an hour to make. The actual work time is about 15 minutes and about one hour of time in the freezer.
Chocolate covered bananas FREEZE really well so you don’t have to eat them within a few days. Many desserts need to be eaten within a few days or they start going down hill fast. These chocolate covered bananas can stay in the freezer for weeks and still taste great!
INGREDIENTS
BANANAS– If you have bananas that are getting too ripe, this is a great way to use them up!
CHOCOLATE CHIPS OF CHOICE– You can use dark chocolate chips, sugar free chocolate chips, or semi-sweet. Whatever you have on hand!
COCONUT OIL– Even if you aren’t a fan of coconut, you should still use it. The flavor is VERY mild and gives the chocolate a nice dipping consistency.
MAKING CHOCOLATE COVERED BANANAS
I don’t think you can really call this a recipe, it is so simple. Grab a few bananas, some chocolate chips, some coconut oil and you’re good to go!
1. Prep the bananas.
Peel bananas and cut into halves or thirds. Place on a baking sheet lined with wax or parchment paper. Stick in the freezer for 5-10 minutes to slightly harden.
2. Melt the chocolate.
Melt chocolate chips and coconut oil in the microwave in 30 second increments. Stir between each session until melted, between 1-2 minutes. Melted chocolate should have a thin consistency that is easy to dip.
3. Dip bananas in chocolate.
Dunk banana or spoon chocolate over bananas. You can cover the whole banana, half, a third, really whatever you want! Place the chocolate covered bananas back on paper or freezer container.
Sprinkle with any extra toppings, such as coconut, chopped peanuts, or pretzel pieces. I actually love mine plain. Call me crazy!
4. Freeze bananas.
Stick the chocolate covered bananas in the freezer for 1-2 hours so they can harden and then enjoy!
When I get an urge for something chocolatey, I pull one of these out and let it sit for a couple of minutes. I also love eating them with some peanut butter.
