CROCKPOT BEEF AND BROCCOLI RECIPE

I don’t know about you, but I do not use my crock pot as much as I should. It is seriously one of the best inventions ever, and it should be used frequently. For whatever reason though, I only pull it out occasionally.
Maybe because I run out of fun recipes??
When life just feels too busy, I love to simplify my suppers and pull out my crockpot. I am reminded how much it can help alleviate stress when it comes to making supper.
If your house is anything like ours, 4:30 to 6:30 is typically crazy. Kids are hungry and fussing. I’m running around with my head chopped off trying not to burn anything or step on a kid. It’s a madhouse.
Anytime I can work on supper ahead of time (like during nap time) and have it ready when my husband gets home, is a win-win.

WHY I LOVE CROCKPOT BEEF AND BROCCOLI
EASY. We have already talked about how easy this recipe is because it uses the crockpot.
HEALTHY. I consider BEEF AND BROCCOLI healthy because it is made with real and whole foods. Our meals consist of protein, vegetables, and healthy carbs so if you pair this with some rice, you have a balanced healthy, home cooked meal!
CHEAP. Crockpot beef and broccoli uses a low quality type of meat such as round steak. Because it is cooked low and slow, it helps get it tender and delicious!
LOW CARB. I try not to eat carbs after lunch, so I normally pair this with cauliflower rice for a great low carb option for dinner. The beef and broccoli itself is relatively low carb too!

INGREDIENTS IN BEEF & BROCCOLI
- BEEF- round steak or flank steak, sliced thin
- CORNSTARCH
- SESAME OIL
- RICE VINEGAR
- GARLIC & GINGER
- BEEF BROTH
- SOY SAUCE – or soy substitute like coconut amminos
- BROWN SUGAR- replace with honey for refined sugar free or omit
- SALT
- RED PEPPER FLAKES
- BROCCOLI
WHAT TO SERVE WITH BEEF & BROCCOLI
WHITE RICE is a great option that your whole family will love with this crockpot meal. Try making your white rice in the Instant Pot for perfect rice EVERY time.
BROWN RICE is a healthier option that can be made in the Instant Pot. Did you know that you can freeze rice? Well you can! Brown rice (and white rice) freeze very well and all you have to do is just pull it out, let it thaw, and reheat for a quick side.
CAULIFLOWER RICE is a WONDERFUL low carb side to pair with beef and broccoli. Keep some stocked in your freezer so you can always have some ready to pull out last minute.
CHOW MEIN NOODLES are a fun and unique side you can serve with crockpot beef. These take a little more time, but are sure to please your family.
Crockpot Beef & Broccoli
Ingredients
- 1 lb. round steak or flank steak sliced thin
- ¼ cup cornstarch
- 1 Tbsp. sesame oil
- 1 Tbsp. rice vinegar
- 2 tsp. minced garlic
- 1 tsp. minced ginger
- 1 ½ cup beef broth
- ½ cup soy sauce
- ⅓ cup brown sugar
- ½ tsp. salt
- 1 tsp. red pepper flakes or sriracha
- 1-2 heads of broccoli, chopped
Instructions
- Place steak in crockpot and sprinkle with cornstarch. Use tongs or a spoon to stir and coat the meat evenly.
- In a small bowl, whisk together sesame oil, rice vinegar, garlic, ginger, beef broth, soy sauce, brown sugar, salt, and red pepper flakes. Pour sauce over the meat and stir.
- Cover and cook on low for 4-5 hours or high for 2-3.
- About 30 minutes before serving, add broccoli and stir. Place lid back on crockpot and finish cooking.
- Sprinkle with sesame seed and green onions and serve.
